Sweet Potato Toast

A variation of avocado toast
Directions
Preheat oven to 400F. Line a large baking sheet with parchment paper.
Cut off the ends of the sweet potato, slice ½ inch thick lengthwise and place on a baking sheet.
Lightly brush oil on top of sweet potato slices with pastry brush.
Bake20 minutes. Test doneness by piercing with a fork.
Mix cream cheese with Orgain Organic Protein Powder in a bowl until smooth and combined.
Top sweet potato slices with cream cheese, sliced avocado, microgreens and everything bagel seasoning.

1 tbsp olive oil or coconut oil (optional)
Sliced avocado
4 oz cream cheese
Microgreens for garnish
Everything Bagel Seasoning
