Shepherd's Pie

Directions

  • Preheat oven 350 degrees

  • Bring potatoes to a boil over high heat then lower to medium and cook 12-14 minutes

  • Drain water keeping 2/3 cup

  • Mash potatotes adding salt and pepper to taste

  • Set aside

  • Cook the onions and carrots over medium heat 8-10 minutes using  little water if needed

  • Add peas, corn and broccoli and cook for 5 minutes

  • Wisk the arrowroot powder, protein powder and plant milk in a bowl

  • Add to vegetables with the yeast

  • Cook until thick 5 minutes

  • Salt and pepper to taste

  • Transfer to a 9*13 casserole pan

  • Spoon the potatoes on top

  • Bake for 1 hour or until bubbly

Ingredients

  • 2 lbs. potatoes, diced

  • sea salt and black pepper

  • 2 large onions, diced

  • 3 large carrots, diced

  • 3 cups each frozen corn and peas

  • 4 cups frozen broccoli

  • 6 Tbs. arrowroot powder

  • 4 cups unflavored plant milk

  • 1/4 nutritional yeast

  • 2 scoops Orgain Unsweetened Protein Powder
