Pasta in a Butternut Squash Sauce

Nutty and sweet with a hint of butterscotch makes a great side dish
Directions
Preheat oven 425 degrees
Combine squash, olive oil, salt and pepper
Roast squash for 30 minutes
Prepare pasta as directed saving 1/2 cup of pasta water
In a blender mix together garlic, protein powder, roasted squash, pinch of salt and pepper, cream, broth, cheese and nutmeg
Pour sauce over pasta over low heat using pasta water if too thick
Top with parsley and parmesan cheese

1 scoop of unsweetened protein powder
3 cups cubed butternut squash
3 cloves garlic, minced
1 1/2 Tbs. olive oil
salt and pepper
3/4 coconut cream or half and half
1/2 cup vegetable broth
1/2 cup Parmesan cheese, grated
pinch of Nutmeg
16 oz. fettuccine
2 Tbs. parsley
