What's better than warm soup on a cold night? This recipe can be made with your choice of protein.

5 Bean Soup

Directions

  • If using dried beans place in a large stock pot and soak overnight

  • Drain and rinse beans

  • Heat olive oil in a large soup pot over medium heat.

  • Add green pepper, onion, jalapeno, garlic, and seasonings. Cook until vegetables have softened.

  • If using a protein add to vegetables and cook until done

  • Stir in tomatoes, beans, and water and simmer until heated through. 

  • Allow to simmer until ready to eat

  • Garnish with cilantro

Ingredients


  • 5- cans of beans of your choice canned or dried (if using dried you must soak overnight and cook 3-4 hours

  • 2 Tbls. of olive oil

  • 1 green pepper, diced

  • 1 medium onion, diced

  • 1 jalapeno peppers, seeded and diced

  • 8 cloves of garlic, minced

  • 1 tsp. oregano

  • 1/4 tsp. pepper

  • 1 1/2 lbs. protein of your choice, ground

  • 28 oz canned diced tomatoes, undrained

  • 2 1/2 cups water

  • fresh cilantro
